Posted on 04 August 2009 by Tony

Are you new to low carb diets? Or have you tried them in the past? Either way you’ll discover that finding a variation of foods that you CAN actually eat does take some careful planning. Many low carb diets consist of just eating a lot of meat but this can soon become tiresome as it’s hard to get flavours in there to make things different. Well did you know that there are dozens of low carb veggies that you can add to your meals to add taste and flavour but without the carbs?

Yes it’s totally true. You can include so many tasty veggies and enjoy every single meal. No more boring old beef steak or chicken breast!

Here are just some of the low carb veggies you can add to your meals today:

Spinach
Broccoli
Lettuce
Cabbage
Sprouts
Celery

Basically most “green” veggies can be eaten plentifully on a low carb diet. Some others you can include on a smaller scale are:

Mushrooms
Cucumber
Beets
Sweet Potato
Peas
Asparagus

Now just imagine what you can do with some of these veggies and some meat. Well let’s just have a look at a simple recipe you can make right away.

Veggie Meatloaf

To make a veggie meatloaf will take you just an hour at most. Then each slice you eat will just be 2-3 carbs maximum and you’ll be able to get around 8 slices out of it.

So what do you need?

1 Pound of lean ground beef
1 Pound of ground chicken
1 beaten large egg
1 red pepper (large)
1 diced onion
1 tablespoon garlic (minced)
2 tablespoons of diced carrots
1 celery stalk
Quarter of a cup of mozzarella cheese
Quarter of a cup of grated parmesan cheese
1 tablespoon beef boullion powder
Parsley and salt and pepper to season

And then what to do with it all:

Add all the meat into a bowl and mix together with the egg. Then add the veggies into a saucepan and sauté them with a small amount of butter until they are soft. Leave them to cool for 10-15 minutes before adding them to the meat. Then mix it all together properly (yes, you’ll have to get your hands dirty!). Once you have done this, add all the other ingredients except for the cheese. Then add the entire mixture into a loaf shaped tin and put the cheese on top. Put it to one side and turn on your oven to 375 degrees F and allow it to preheat. Then put the meatloaf into the oven for around 45 minutes.

Take it out and enjoy!
